Oil &Vinegar



É rara a vez em que não entro nesta loja no Centro Comercial Colombo: a Oil & Vinegar
Hoje não vai ser diferente. Deixo o um jantar para o Dia da Mulher

Tagliatelle de Marisco com Creme de Açafrão


Ingredientes:

Tempo de preparação: 20 minutos
Tempo de cozedura: 20 minutos
4 Pessoas

100 ml de vinho branco
uma boa pitada de açafrão
1 dente de alho
400 gr de misto de marisco ou camarões tigre
200 gr de mexilhões já limpos
284 ml de natas
500 gr de Tagliatelle de Salmão O&Vamp;
30 ml (2 c. de sopa) de coentros picados

Modo de preparação:

Cobrir o açafrão com o vinho branco durante 10 mn. Esmagar o dente de alho, e fritar num pouco de azeite, juntar a nata e a mistura do vinho branco e o açafrão. Deixar ferver, pôr no mínimo e guardar. Juntar a mistura de marisco ou os camarões, os mexilhões, e cozinhar durante 5 minutos para que os mexilhões abram. Cozer a massa em água salgada durante 5 minutos. Tem de ficar “al dente”. Juntar ao molho, saltear com cuidado e por fim salpicar com coentros frescos picados.
Servir!

Flour for dusting

Chop the shallots and garlic and sweat off in a few drops of olive oil. Add the dry cider and bring to the boil, reduce by half. Add the cockles, mussels, prawns, heads and shells. Place a lid on the saucepan and cook for a couple of minutes until the mussels have opened. Remove the cockles and mussels from their shells.
Strain off the stock and place into a clean saucepan, bring back to the boil. Add the tomato passata, bring to the boil, then add the double cream, reduce and remove from the heat. Whisk in 2tbsp olive oil.
Pasta: Sieve the flour with the salt. Add the egg and the olive oil. Mix well to form a dough. Cover and leave to rest for at least 30 minutes.
The amount of oil needed will depend upon the strength of the flour. More oil may be needed.
Cook the pasta and drain. Place the mussels and cockles flesh back into the sauce and reheat (do not boil). Place a mount of pasta in the centre of the plate then coat with the sauce.
